Barfi reminds me of my childhood. And the Beetroot Vermicelli Barfi is one of the delightful sweet which is really tasty and delicious & that’s perfect for festive season. It is prepared with the beetroot, sugar, dry fruits, vermicelli, ghee, sugar & milk, it’s a luscious dessert which could be the favorite of anyone who likes sweet items. You could have the fusion recipe on the special events and occasions such as potlucks, game nights, birthday parties, or kitty parties and the festivals such as Diwali.
Ingredients for Beetroot Vermicelli Barfi:
- beetroot-600 gm
- milk-400 ml
- ghee-6 tsp
- powdered mixed dry fruits-20 gm
- vermicelli-200 gm
- coconut milk powder-100 gm
- sugar-200 gm
- powdered green cardamom-4 tsp
How to prepare Beetroot Vermicelli Barfi:
Step 1) Initially, drop the green cardamom & mixed dry fruits in grinder jar & grind them. Put the powdered mixture in a vessel. Next, take the vermicelli, & place it in a vessel. Put the vessel on moderate flame & pour ghee into it. Fry the vermicelli, also make sure that it doesn't stick to bottom of it. To the vessel, include the sugar, milk, coconut milk powder & combine all the components finely.
Step 2) Then, in a pressure cooker, bring the beetroot with the water & put it on moderate flame. When it boils, take it off the flame & drain the water out. Peel the beetroot & then mash it. Place the mashed beetroot, along with the powdered dry fruits and combine in the vermicelli vessel. Continue stirring the barfi mixture till a thick consistency is attained. Turn off the flame & put it in a tray. Allow it to cool down.
Step 3) When it cool down, it would solidify. Next, cut in pieces of preferable shape without crumbling it in bits. Have it fresh, or store in the fridge to retain the rawness.
