Ingredients for Slim Vada Pav:
- Bread slices - white - Eight
- Medium boiled potato - Four
- Curry leaves - 10
- Mustard seeds - 1/2 tsp
- Lemon juice - Four tbsp
- salt as per requirement
- Low fat milk - One litre
- Garlic - Two cloves
- Coriander leaves - Two tbsp
- Powdered turmeric - 1/4 tsp
- The Refined oil - One tbsp
How to prepare Slim Vada Pav
Step 1) Put a saucepan on a moderate flame & pour milk into it. Bring that for boiling & then remove it from heat. Instantly pour two tbsps of lemon juice into the hot milk & stir it till the milk curdles. Allow it to stand for ten mins, then strain it with a muslin cloth, making sure all the whey has not remained. The extra milk is drained & the paneer is dropped behind into the cloth. Meantime, preheat the oven at 160 degrees for around eight to ten mins.
Step 2) Then, heat oil into a pan on a moderate flame & drop mustard seeds into it. When the seeds start to splutter, have chopped garlic, curry leaves and chopped green chillies into it. Then, Saute these till the mix becomes aromatic & add the turmeric powder, salt, and diced potatoes. Mix it properly & be sure that the potatoes are smooth. Transfer the mix to a big plate & allow it to cool.
Step 3) Now, Crumble the home-made paneer & combine it with that potato mix. Then, add the sliced coriander leaves & rest lemon juice to the mixture. Then, mash the mix finely & make sure that there are no lumps into it. Then, put a vessel on a moderate flame and, when it is hot, roast the bread slices into it.
Step 4) Then, Spread the paneer-potato mix on the toast bread slices. Bake the slices in the preheated oven for around four to five minutes. When they become crispy, then remove them from the oven & transfer them on a plate. Have these hot with dip or a chutney, enjoy the slim vada pav!
